Grass-fed hamburgers here! I tipped mine a bit so that the full burger is viewable. I know there are other items on the menu but I was taken with the burger. When I told the chef I was gluten-free, Andres (also the owner) took extra time to clean each item that would come in contact with my food. The lettuce-wrapped burger was perfectly done, and the side of mixed veggies with his house-made, long-aged vinegar, was the perfect side dish. Colmillo is in a food court and I almost missed it. It is worth tracking down.

Increíble sabor, ingredientes naturales y todo preparado al momento. El tiempo de servicio es proporcional al sabor, no el más rápido del mundo pero la comida de calidad merece esa ligera espera. Más lugares asi se necesitan: locales, sabrosos y con precios justos. Felicidades al chef!

Hoy regresé al Colmillos y me llevé una muy buena impresión.
Primero, Andrés (el dueño del lugar) me pidió una disculpa para la experiencia que tuve hace unos días (ver más abajo).
Segundo, me preparó una deliciosa hamburguesa de la casa con papas de gajo.

Si visitan este lugar les recomiendo que pidan el aioli que prepara Andrés, este queda muy bien con las papas y que pidan queso azul para su hamburguesa. Además la mostaza del lugar vale la pena probar.

Por último, quiero recalcar que mi comentario inicial es irrelevante ya que ahí no roban!

Mal comida y cara. $45 peso por una papas gajo sin chiste, desabridas y mal servidas es un robo!

Stood around with Andres and talked about food, burgers and life. The food is prepared with care and excellence. For example, he selects the cuts of meat that are ground into the paddies, makes his own mustard and makes veggie paddies based which veggies are perfect at the market. This only happens at a small scale so come experience it now.

One of the best burgers I've ever had. Paired with the vino tinto from next door and the fries and you've got a perfect meal! Casual, hip, ambient spot with good music and people passionate about their food!

El lugar super agusto pero la comida está fuera de lo normal, Tienen que probar la Colmillo Hamburguesa.
Recomendada 100% sin duda vuelvo a venir pronto.

Excelente sabor y precio! Las papas de camote! Deliciosas! Todo es hecho por el chef que es una excelente persona!

Que hamburguesa me comi en este lugar. De lo mejor. Y un postre maravilloso. No dulce Ya quiero regresar a San Miguel sólo para disfrutar de este lugar. No se lo pierdan. En su interior hay árboles y mucha paz. Aun y cuando se sienta calor, estarás muy fresco a la sombra de sus árboles.

The food was absolutely delicious! We tried all 3 sliders, and they were amazing! The owner, Andrés stayed open late for us, and was so friendly. He even gave us recommendations for San Miguel de Allende and more. Don’t miss out on this fantastic place!

Si vous voulez goûter à de vrai burger, n'allez pas plus loin. J'ai pu déguster l'offre "slider" proposant 3 "petits" burgers, tous délicieux. Pour accompagner ceci, j'ai commandé des frites de patate douces: un RÉGAL! Bonne dégustation

You get three different sliders with your order, generously sized. They use a sauce that actually includes Mexican chocolate and has the perfect amount of tartness and.well, it's a secret sauce so you'll have to try and guess the rest. I just know I want to dip everything into it - like their sweet potato fries, french fries, onion rings, and my fingers. So. Good. Soon there will be live music as well.
